With the San Giorgio Spumante, the history of the Falconieri winery begins: it was 1985 when Remo, after attending a sparkling-wine course in Épernay, decided to give new life to Erbaluce by transforming it into an elegant and vibrant Traditional Method wine. Since then, this wine has embodied the pioneering spirit of the estate and Remo’s love for sparkling wines, earning him the nickname “Archimedes of Bubbles,” coined by Carlin Petrini.
Made from Erbaluce grapes grown on moraine soils rich in stones, San Giorgio Spumante ages for 36 months on the lees, developing complexity and finesse. In the glass, it shows a pale straw-yellow color with greenish hues and a fine, persistent perlage. On the nose, it opens with fresh, mineral notes followed by delicate hints of bread crust; on the palate, it is harmonious, taut, and crisp, with a long, clean finish.
Perfect as an aperitif or throughout the meal, it pairs elegantly with fish, white meats, fresh cheeses, and vegetables.
