Erbaluce di Caluso Passito Alladium 2019
Alladium is the heart of Canavese tradition and the living memory of the winery. Its name, recalling the ancient Latin toponym of Agliè, speaks of the origins of the territory and of the Falconieri family, who in 1985 made it the symbol of their history.
It is born from an ancient ritual: clusters of Erbaluce, hand-selected, are hung one by one in drying lofts, following the old country tradition once used to preserve fruit through the winter. After a long natural drying process and at least five years of patient maturation in small oak barrels, an elegant and complex passito comes to life.
In the glass it appears golden and bright; it releases aromas of raw honey, candied citrus, and musky notes. On the palate it is sweet yet fresh, velvety, and harmonious, with a long, radiant finish.
A quintessential meditation wine, it pairs beautifully with dry pastries, blue cheeses, or simply with the pleasure of slowing down.
